Just crumble tofu and mix with veganese (or another vegan mayo), a little mustard, some chopped celery and salt and pepper. You can add other things like carrots, raisins, apple, etc. to your taste! Quick, easy and delicious. Serve on a bed of lettuce or between two slices of toast.

I’ve been in the mood for something warm and a little heavier lately, so this seemed to fit the bill.
Ingredients:
1 cup chopped cauliflower
1 cup chopped green bell pepper
1 large onion, chopped
2 cloves of garlic, chopped
1 can chickpeas, drained and rinsed
3 tablespoons olive oil
2 bay leaves
1/2 teaspoon cumin seeds
1 tablespoon shredded ginger
1 tablespoon coriander powder

Quick and Easy Vegan: Naan
Ingredients:
1 cup bread flour
1/2 teaspoon baking powder
1 pinch salt
2/3 cup water
extra flour for rolling
Directions:
Whisk together the bread flour, salt, and baking powder in a medium bowl.
Add the water and stir. Then knead with your hands for a minute or two. If dough is too sticky, add a bit more flour.
