orangesalad asked: Most of the time I'm only cooking for myself and sometimes for my boyfriend (read: 1-2 people). So if the recipe (like the butternut apple soup recipe u just posted) calls for 1tbsp or 1/2tsp of smth and it serves 6 people, how do i proportionately downscale it to serve for 1-2 people? thanks.

I’m not always a huge stickler for amounts in recipes, so I use things like pinches, dashes, and drops a LOT when I cook. So, if you’re going for 1/6th of a tsp., just try pinching some in there and I’m sure it’ll turn out fine. That, or I use my smallest measuring spoon and eyeball half or a third of it. I also think that having more spice isn’t so bad, so even if it turns out to be a little more than called for, that can be a good thing. You might have to make something twice before you figure out the right amounts.

I’d also suggest that you make the full batch and freeze some of it. It’s usually cheaper, less work, and you don’t have to make lunch/dinner the next day!
